Ricotta ovina salata e stagionata. La ricotta, raffreddata, è salata senza aggiunta di conservanti, viene attaccata da muffe nobili e controllate che le donano piccantezza e complessità in bocca. Spiccatamente sapida e burrosa è ideale su primi piatti al pomodoro o in purezza con marmellate e miele. le forme sono da 500g circa.

The ricotta is made warming up at approximately 80 °C the whey. When the Ricotta is well cold  (usually the day after ) it’s salted with coarse sea salt. The salt is only preservative added, the ricotta age for circa 2 mounts at 10 °C. During the aging it’s been attacked from noble mould. The ricotta, thus prepared, will be delicately washed just before consuming it. Savory and buttery and quite spicy (thanks to the mould) it’s  perfect on pasta with tomatoes sauce or whit jams and fruit compote.
